When Sandals announced its US$200 million transformation of three of its iconic Jamaica resorts, the redesigned accommodations naturally captured plenty of attention. But for many travellers, one of the most exciting parts of the announcement is what will be happening when it comes to new restaurants.

As someone who has experienced many of Sandals' restaurants firsthand—including Buccan at Sandals Regency La Toc—I was especially excited to see how the brand is continuing to elevate its culinary program.

The new dining concepts coming to Sandals Montego Bay, Sandals Caribbean Cay (formerly Sandals Royal Caribbean), and Sandals South Coast place a stronger emphasis on authentic Jamaican flavours, locally sourced ingredients, and immersive dining experiences that celebrate the island's culture.

Here's what couples can look forward to beginning later this year.

Sandals Montego Bay: A Celebration of Jamaica

Already home to some of Sandals' most popular restaurants, Sandals Montego Bay is adding several exciting new concepts.

One of the biggest highlights is Buccan, making its Jamaica debut after quickly becoming a guest favourite at Sandals Saint Vincent and later Sandals Regency La Toc in Saint Lucia.

Located on the waterfront, Buccan takes guests on a culinary journey through Jamaica's parishes using locally inspired dishes cooked over open flame. Large communal tables encourage conversation and connection, creating an experience that's every bit as memorable as the food itself. Having dined here myself in Saint Lucia, I can confidently say this is one restaurant you'll want to reserve during your stay.

Guests will also discover:

  • Bay Roc Rum Bar, celebrating Jamaica's rich music and rum heritage through vintage décor, local artwork, signature cocktails and an impressive vinyl collection.
  • Parisol Beach Club, an all-day beachfront destination featuring the resort's historic swim-up bar, a new Jerk Shack, made-to-order pizza, cocktails and evening entertainment.
  • Scrimshaw, specializing in fresh seafood with panoramic ocean views.
  • Heart & Sol, serving smoothies, salads and lighter fare.
  • Tesoro, offering international cuisine during the day before transforming into an Italian restaurant each evening.
  • Returning favourites including Butch's Island Chop House and Soy Sushi.

Even the arrival experience is receiving an upgrade with a new lobby bar and BLUM Coffee Shop, serving Jamaica's world-famous Blue Mountain Coffee.

Sandals Caribbean Cay: Jamaican Hospitality Around the Table

Formerly known as Sandals Royal Caribbean, Sandals Caribbean Cay is embracing an even stronger connection to Jamaican culture.

The standout addition is Suppa, a completely new dining concept inspired by the tradition of gathering together for Sunday dinner.

Rather than feeling like a typical restaurant, Suppa has been designed to resemble a welcoming Jamaican home, with intimate dining spaces that flow through living, dining and outdoor gathering areas. Guests will enjoy a shared set-menu experience featuring modern interpretations of beloved Jamaican dishes.

Expect creative twists on traditional flavours—like rice and peas reimagined as a creamy risotto—while still staying true to the island's culinary roots.

Just outside, guests can begin the evening at Keynote Rum Bar, a cozy pre-dinner lounge showcasing premium Caribbean rums and locally inspired small bites.

The resort's private offshore island is also receiving a significant refresh.

The new Parisol Beach Club will become the social heart of the island, offering breakfast, lunch, dinner, cocktails, beach games, a swim-up pool bar and plenty of shaded areas to relax between swims. A new Jerk Shack completes the authentic Jamaican beach experience.

Sandals South Coast: New Flavours Meet Familiar Favourites

Sandals South Coast has long been known for its spectacular two-mile stretch of beach and peaceful setting. Now it's adding some long-awaited dining enhancements.

Perhaps the biggest news is the arrival of Butch's Island Chop House, one of Sandals' signature restaurants and a favourite among returning guests. The steakhouse will be paired with a dedicated martini bar, creating an elegant evening dining experience.

Guests will also enjoy:

  • BLUM Coffee Shop featuring Blue Mountain coffee and fresh pastries
  • Jasmine's Pan-Asian cuisine
  • Schooners and Neptune's seafood restaurants
  • Sushi on the Sand
  • Bayside's international menu by day and French Brasserie by night
  • Giuseppe's Italian restaurant
  • Jerk Shack
  • Chick 'N Dippers gourmet comfort food truck

Looking ahead to early 2027, Sandals South Coast will also introduce the B-Side Rum Bar—a hidden second-floor cocktail lounge inspired by the lesser-known "B-side" of classic vinyl records. Expect handcrafted cocktails, premium rums and shareable small plates in an intimate setting.

More Than Just New Restaurants

What stands out most isn't simply the number of new restaurants—it's the direction Sandals is taking.

Across all three resorts, the focus is shifting toward experiences that celebrate Jamaica itself. From locally roasted coffee and island-inspired cocktails to traditional recipes presented in contemporary ways, these new dining venues are designed to help guests experience Jamaican culture beyond the beach.
